This is seriously the easiest snack ever--so simple! Take your favorite kind of ripe tomato (I'm a fan of roma and heirloom) and cut it into thin slices. Drizzle a little bit of olive oil on top.

Preparation. Heat the oil in a large nonstick skillet or heavy casserole over medium heat and add the onion. Cook, stirring, until tender, about 5 minutes, and add the garlic and peppers. Cook, stirring often, for 5 minutes and add ½ teaspoon salt. Continue to cook for another 5 minutes, until the peppers are tender.

Pre-heat oven to 275F. Place the rack in the top third of the oven. Line a baking sheet with foil for easy clean-up. Cut tomatoes into halves and remove cores. Cut peppers into quarters and remove any seeds. Add olive oil, dried herbs, roughly torn basil, garlic, and salt & pepper to a bowl.
