Although when you're shredding the zucchini you want to take out as many of the large seeds before mixing or freezing. Just thought I'd share how I salvage those zucchini that grow too large in the garden before I discover them!

Pour the rest of the seeds into a colander and spray with water until all the extra flesh has washed away. Spread the cleaned seeds onto a fine screen or wax paper and allow them to dry for a few days. Mix them periodically throughout this process to assure no moisture is left on the seeds.
